500 Calorie Poblano Salmon

1. **Prepare the Poblano Salsa:** Char the 2 poblanos, 1 jalapeño, ¼ white onion, and 4 garlic cloves. Once charred, combine them in a blender with 1 tbsp Knorr caldo de pollo, ¼ sprig cilantro, ½ cup low-fat cottage cheese, and water as needed. Blend everything until smooth.
2. **Prepare the Salmon:** Season the 5.5 oz salmon with blackened seasoning (paprika, chili powder, garlic powder, onion powder, black pepper). Pan sear the salmon until cooked to your desired liking.
3. **Prepare the Veggies:** Cut 3 Mexican squash, 6 green onions, and 1 bunch of asparagus into bite-sized pieces. Season the vegetables with onion salt, black pepper, and salt. Sauté the seasoned vegetables in a pan until tender.
4. **Assemble the Plate:** Top the cooked salmon with ⅓ cup of the prepared poblano salsa. Serve the salmon and salsa alongside 1 ½ cups of the sautéed vegetables.
